Healthy On The Go Snack - Carrot Power Balls

One of the things I like to make is this super healthy carrot power balls.  Whenever I need a snack, I go for this instead of reaching for a commercially made muesli bar or a bag of chips.  This recipe is so versatile you can virtually put anything you want in it.  If you think it's not sweet enough, add abit more dates.  If you want a chocolate feel, add some cacao powder or chocolate chips.  Anything and everything is possible.  Replace the carrots with almond meal and for a Christmas feel, add some chopped cranberries and grated lemon zest.  Enjoy!

Healthy Snack

Ingredients:

1 and half large carrots

3 medjool dates

1/4 cup raisins

1/4 cup walnuts

1 tablespoon psyllium husk

1 tablespoon desiccated coconut

zest of 1 orange, liquid of 1 orange (use as much as it takes to combine) pinch of cinnamon and nutmeg to taste

Method:

Put everything in a food processor and coarsely blend.  Only add as much orange juice as it takes to combine. If it is too liquid, adjust with more psyllium husk and desiccated coconut to make it come together.
Roll into bite size balls and coat with desiccated coconut.
Chill and enjoy!
