Mike Fleming brings over 60 years of experience to the baking industry, establishing himself as a master craftsperson, teacher, educator, and innovator. His extensive career has been marked by significant contributions to both technical and educational aspects of baking.

Leadership in Baking Education

In 1993, Mike Fleming arrived in Singapore, where he took on the role of founding principal and master trainer for the Baking Industry Training Centre (BITC). Tasked with building a professional baking school, he helped create the first institution of its kind in the region. The BITC was dedicated to training both established bakery staff and new entrants, focusing on technical knowledge and the science behind baking.

Industry Experience and Innovation

After his work at BITC, Mike transitioned to a local company that specialised in ingredient technology for commercial bakeries throughout the Asia Pacific region. His industry experience further deepened his understanding of baking science and its practical applications in large-scale production environments.

Establishment of CerealTech School of Baking Technology

Mike Fleming went on to found his second school, the CerealTech School of Baking Technology (CTSBT). From 2005 through 2019, CTSBT offered industrial training programs up to the diploma level, equipping students with advanced skills and knowledge tailored to the needs of the baking industry.

Philosophy and Focus

Throughout his career, Mike has emphasised the importance of mastering basic baking skills. His approach centres on understanding what must be known and how tasks should be performed to consistently produce high-quality products.
