So let’s begin with Country Style Chicken Stew with Herb Roasted Potatoes. Happy cooking!

Ingredients for Chicken:

5 pc chicken thigh or drumstick
2 tbsp vegetable oil or olive oil (for chicken to pan sear)
1 pc medium size carrots
2 stalk of celery
300 ml chicken stock
1 tsp chopped fresh basil
1 1/2 tsp of dry oregano
1 tsp minced fresh sage
1/2 tsp onion powder
1/2 tsp paprika
2 bay leaf
1/4 tsp fresh tarragon leaves
1/4 tsp fresh thyme chopped
500 ml tomato sauce
1 tbsp chopped English parsley (for garnish)

Method for Chicken:

  1. Brown chicken pieces in oil on both sides. Drain excess oil.
  2. Remove the chicken, on the same pan sauté onion until translucent.
  3. Add in carrots, celery all the fresh herbs and dry herbs sauté until the flavour and aroma comes out.
  4. Add the chicken, chicken stock and tomato sauce. Seasoned with salt and pepper.
  5. Cover and simmer for 1 to 2 hours.
  6. Serve on a plate and garnish with chopped parsley.

Ingredients for Herb Roasted Potato

4-5 pc potato cut to wedges
5 cloves of garlic sliced
5 stalks of thyme chopped
5 stalks of rosemary remove the leaves from the stalk
olive oil
salt and pepper

Method for Herb Roasted Potato:

In a mixing bowl mixed all the ingredients and tossed with olive oil make sure potatoes are well coated.
Arrange in a baking tray with baking paper and bake for 15-20 mins at 180C or until golden brown.
