(NEW CLASS) Japanese Knife Skills: Preparing Nigiri and Sashimi

Learn how to slice fish to prepare sashimi and nigiri.

Cutting techniques are an important element of Japanese Cuisine. Proper knife skills needed to make clean cuts for sashimi is important for both presentation and taste. Chef Amelia will guide you in the use of a sushi knife, from handling it to using it to scalp, gut and slice the fish. You will also learn how to prepare sushi rice and condiments to plate and present sashimi and nigiri.

In this class, we will be using seabream (tai) freshly imported from Japan. Each participant will receive at least 700g of fillet fish.

Each participant will be working individually.  Bookings must be made at least 4 days in advance so that Chef Amelia can place the order to Japan.
