Learn how to make these cute hedgehog macarons suitable for Teacher’s Day or any other special occasion that calls for these little critters to appear! You will learn a number of techniques that can also be applied to other simple character designs using the French method. Besides the basics of the French method of making macarons, you will learn how to make 3 colours of batter in a single batch of ingredients, how to pipe the hedgehog design and how to use royal icing transfers to simplify the process of creating fine details on the characters. Natural ingredients are used to colour the batter. The filling is Hojicha chocolate ganache that is almost dairy-free and firm enough to hold up in Singapore’s tropical climate so it’s suitable for macarons that are given away as door gifts during parties.
