Patissier In Training - French Pastry Entremets
Participants will be looking at picking up techniques such as handling chocolate, creaming, rubbing in, emulsification, assembling, decorating and combining flavours through making and finishing the pastry product.
They will also learn the molding of tarts, assembling of entremets, glazing and decorating of mousse cakes and the importance of building layers and textures in a good French entremet.
