This 5 day intensive hands on course focuses on Indonesian cuisine. This cuisine is vibrant and colourful with intensive flavours which is often hot and spicy. Due to the vast number of islands and ethnic groups, the food is eclectic and diverse.

Day 1:
Introduction to Indonesian spices
How to make basic sauce red sauce and white sauce
Wrapped grilled fish in banana leaves
Corn fritters
Sambal bajak
Steam vegetables
Steam rice

Day 2:
Yellow rice
Urap urap ( steamed vegetables in grated coconut dressing)
Sambal prawn
Chicken galanggal
Sambal goreng teri and peanuts

Day3:
Assorted sate
Mahlub/ mince lamb wrapped in caul fat
Sate meranggi, beef sate with spice coconut
Sate Madura, chicken sate
Sate Padang, tongue sate with curry sauce
Rice cake
Acar
Soto lamongan

Day 4:
Balinese cooking
Rojak kuah
Lawar
Sate lilit
Sambal matah
Bebek betutu

Day 5:
Indonesian favourites
Opor ayam/chicken curry
Rendang
Belado telur/ red chili eggs
Gado gado
Pisang aroma
Es puter / coconut base ice cream

Notes:

Participants will work in pairs although some group work may be necessary to make base sauces.
