Learn the basic techniques and culinary knowledge to make western cuisine for a cafe kitchen.

The focus will be on preparing appetisers. Learn about food hygiene and basic kitchen safety, introduction to basic utensils and kitchen equipment.

Finger food entree module: 
Italian meatballs in pomodoro sauce
Hummus with flatbread (we will be making the flatbread from scratch)
Cheesy canapés with roasted tomato and anchovies (warm and cold)
Creamy sausage stuffed portobellos

Soups entree module:
French onion soup 
Mushroom soup

Seafood entree module:
Seared scallop on cauliflower purée 
Cocktail shrimp with avocado
