Tabbouleh is a healthy salad made with bulgur. Traditionally served as part of the mezze (small plates) in the Arab world, it is a vegetarian salad made of tomatoes, finely chopped parsley, mint, bulgur, and onion, and seasoned with olive oil, lemon juice, and salt. In this variation, we make it with quinoa.
Mutable is roasted eggplant dip.
Kibbeh is a favourite with everyone. Often made with chicken or beef, with bulgur for the outside shell, it stuffed with mince onion, meat and roasted pine nuts.
