This unique confection that combines the goodness of marshmallows and choux pastries is like entremets or fancy S’mores! It can be kept and consumed at cool room temperatures, suitable and practical for tropical Singapore.

Passionfruit honey vanilla marshmallow made from fresh passionfruit puree and acacia honey gives this dessert a delightful freshness.

The filling in the choux au craquelin is a dark chocolate passionfruit truffle with acacia honey jelly in the middle.

Basics of patterned choux pastries and decorative marshmallows will be covered in the class, as well as the dairy-free filling for the choux pastry.
